A Chinese menu by Zhao Guangyou

On flights from Paris to Beijing, Hong Kong, Shanghai, Wuhan, Guangzhou and Singapore, as part of its service upgrade, Air  France has asked Zhao Guangyou to create some flavorful dishes for the Business menu. Gourmet fare by this chef, who’s at the helm of the restaurant at Beijing’s JE Mansion, will be on offer for one year. Prepared and cooked to extremely precise specifications, using highly select ingredients, delicately produced and elegantly presented, his dishes are variations of classic imperial cuisine. Four of the chef’s special recipes will be served in all, changing every three months: sweet and sour pork in July, August and September; roast cod with braised sauce in October, November and December (photo); kung pao shrimp in January, February and March 2018; and Chinese beef simmered with baby vegetables in April, May and June 2018.
